Development of a fryer-based heat reclaimer for the restaurant industry

With the successful demonstration of HARVEST (formerly POWER) system with Pizza Pizza, this project focuses on adapting the HARVEST system for use with gas-fired fryers and demonstrate the proven waste heat recovery technology in a full-service restaurant (FSR) operated by Recipe Unlimited. Being a fuel-less, carbon-free water heating system that acts as a drop-in replacement for traditional water heaters, the novel heat reclaimer component will be adapted and tested at McMaster University’s gasfired fryer test facility and deployed for a six-month demonstration pilot at a Recipe Unlimited owned restaurant within the Greater Toronto and Hamilton Area. The project will be extending the HARVEST technology to more appliances to allow commercial restaurants to improve their operational efficiency and offset their growing utility costs and reduce their GHG emissions.
