Effects of egg yolk granule exposed to high hydrostatic pressure on the gut microbiota and metabolic health of obese mice

The human intestinal tract contains trillions of bacteria that greatly influence the way we absorb and use the nutrients in our food. In the context of obesity, the balance of this environment is impaired which could lead to the worsening of diseases related to obesity, such as type 2 diabetes. This highlights the need for the research and development of dietary treatments that aim to structure the gut microbiota in a way that will promote intestinal and metabolic health. The objective of this project is to test the effects of egg yolks that have been enriched by exposure to high hydrostatic pressure on the gut microbiota and metabolism of obese mice. As a result, this study will contribute to our knowledge of intestinal ecology and its effect on metabolism while also providing the egg industry with an innovative ingredient that aims to solve one of today’s major public health issues.
