Bio-extraction of chitin and astaxanthin from Porcupine Crab Shells

The main objective is to advance the knowledge of porcupine crab for the purpose of developing a commercial fishery in Canada, Nunavut, Newfoundland and Labrador and to develop a suite a value added crab products. The aim of the current study is to extract, quantify and characterize chitin and astaxanthin from porcupine crab shells as potential new products and promote full utilization of the resource.
