How we can modify processing methods to improve health benefits of B-glucan in traditional Kineto Barely Beverage for IBD Patients

People living with IBD, grave and lifelong disease, have gut damage and pain. Fibers can improve gut health in healthy people, but they are not digested in the gut. Instead, they are broken down by gut microorganisms (bacteria and fungi) in a process called fermentation. But the types and amounts of gut microbes in IBD gut is different from healthy people so they cannot ferment fibers. We showed that a fiber called ß-glucans, found in grains, does not cause inflammation but can still make the gut barrier leaky and allow access to harmful substances. In my study, I will look at how barley and a traditional Kineto beverage can be processed differently to develop a beneficial prebiotic beverage. Through the trainings and mentorships, I will be getting through Lab2Market, I will analyze the customer needs, product development and commercialization to bring this product to the market for consumption.
